Detail the immediate, short and longer term action required to improve food safety and hygiene standards and to ensure legal compliance in a detailed audit report completed on site During the audit undertake coaching of staff on any food safety matters that need to be addressed but also identifying good practises and providing positive feedback Inspect the premises and equipment to confirm if it is in a hygienic and clean conditions and confirm what improvements maybe required Inspect the fabric and structure of the food premises and facilities to identify if they meet legal requirements in terms of condition, ability to keep clean, and provisions of lighting, ventilation, water supply and general layout. Confirm if the food equipment is in a suitable and hygienic condition Identify any gaps in your Food Safety Management system documentation, records and level of implementation especially at CCPs. Provide a full Food Hygiene audit report on site detailing any action required to improve food hygiene standards. Spend time with the management team feeding back of the results of the audit and any actions required. Be available for questions and support. Provide an accurate estimate of the Food Hygiene rating the premises would be issued and the action required to achieve a 5 Food Hygiene Rating.
